If you only want to learn one spec then I'd recommend you choose Carnage, as there are some fights where it is almost required and your sustained dps is still extremely high if you can play the spec well.(This is based directly on Chill’s original post, that was subsequently updated for the set bonus changes introduced in Game Update 2.0 and updated in Game Update 2.7, and further updated for the changes in Game Update 3.0) Sadly at this time Fury doesn't bring anything to the raid that either Annihilation or Carnage don't do better (PvP and Solo are a different story). Carnage should be played in the other set of cases, such as if you aren't able to get much uptime on the boss, there is constant or at least frequent target swapping, or there are windows of time where high burst are required. Anni should be played on any fight where you have a good amount of uptime, minimal target swapping, and no short windows of time where higher checks of dps are required. Annihilation has the highest single target sustained damage in the game currently, and Carnage has the highest sustained damage for a burst class. Ideally, for endgame PvE you should learn both Annihilation and Carnage if you want to bring as much to your group as you can.
